My younger sister’s (p.shotss) favourite dish of summer 2021 hahaa ๐Ÿคฉ She wasn’t too keen of tofu because of previous tries but I can say she’s loving it now ahah ๐Ÿ‘๐Ÿพ๐Ÿ’ฏ

After drying the tofu out I coated it in a mix of cornstarch, salt and pepper, so when it was fried it became reaal crispy on the outside but still soft inside. I thought I overdid it at first because the outsides were a little too hard, but they ended up working perfectly once they were added into the rest of the stew, they became softer again and soaked up so much flavour (video 2) โœจโ—ป๏ธ

In love with how well the sliminess of the okra worked – after washing and blanching, I cut them up (looked like tiny green stars ๐Ÿคง – photo 7) and fried them off a little to help reduce the amount of smile, so it wasn’t so overwhelming โญ

First time making coconut rice, and I think I was a little off with the ratio of coconut milk and water to rice so maybe it was a little softer than it should be? But it did help with shaping them into domes hahaa ๐Ÿฅฅ๐Ÿš

Really enjoyed creating this meal using what I know from different cuisines – I’ve grown up eating okra but only in its blended form for Nigerian meals, so it was great to try it out another way (my sisters were saying the same thing :D). And while tofu is a great substitute for meat, I’ve found that some people wouldn’t think to use it along with meat so I think this meal is one great way to see how it works โœจ๐Ÿฒ
