16∙10∙2020 》Burnt-But-Recovered(ish) matcha cake with a cream cheese white chocolate topping 🌿 It was baking so well till I forgot about it in the oven, got there about 10 minutes late 😭

After getting it out of the oven I saw that the inside was still pretty green so I put clingfilm over the top and let it it sit overnight (keep whatever moisture was left in there ♨️

Next day I cut the top off and then cut the cake into slabs, the inside wasn’t looking so bad but there were some stodgy/dense streaks going though it so there was either too much liquid or sugar in the mix. But the matcha taste was still coming through :’)

I wanted to try putting the icing on with a pipe, it was my first time and you can definitely tell where I started (picture 10), gonna need more practice 🥴

After cutting the slabs into smaller pieces and adding the icing (just mixed cream cheese and white chocolate together) I made the mistake of leaving the pieces out for some hours, completely forgetting how dry it would get – I actually gave them out to some friends the next day and they were even drier (not completely dry tho haha) 😭 the icing saved it a little but I’m sure I won’t be making that mistake again 👀

Think matcha cake is one of my favourite things to make, should definitely think of ways to substitute more ingredients like white sugar and butter 👏🏾
