23∙02∙2021 》Lentils (LEGOOMS), aubergine, coconut and steak stew and cauliflower bites with brown rice and barley – and some salad on the side 🍛 This is one of my new favourites and one of those dishes you can make a pot of and have loads to pack into the fridge/freezer for meal prep and quick eats!

Started off by frying onions down with the aubergine and small chunks of steak and minced meat (the minced meat wasnt much but it needed using up).

I then rinsed off some green and red lentils and added them into the pot, stirring for 1 or 2 minutes. After seasoning and adding coconut milk and water I left the pot for around 2 hours, just letting it all slow cook and turn into this tastyyy stew (being able to leave it on its own for a few hours to work on other things is another reason I love slow cooking) 🍲

For the cauliflower bites, after chopping and rinsing the cauliflower I placed them in the over for 10 minutes to get them a little crispy. I then made a batter out of flour, water and some seasonings and added the cauliflower to the batter. It was put back into the oven for 20/25 minutes till they were all golden and crispy

Love how tasty lentils can be, you could easily take away the steak and mince from this dish and you wont miss them – the lentils make an awesome replacement still give a great texture 😋 They’re also full of protein and fiber 🌟

Also small story – I was looking at the bowl in the picture for a good few weeks before buying it, and 5 minutes after purchase the edge cracked and chipped 🤕 soo annoying, I’ve tried to superglue the pieces and so hopefully its not that noticeable 🥵
