31∙05∙2020 》Finally starting to upload the cheesecake series 🥴 My first attempt at an ube cheesecake (and the 2nd attempt at any cheesecake too).

For the longest time I really wanted to try cooking/baking with ube (purple sweet potato) so I was excited to give this a try 🍠

In the videos I watched I couldn’t find a recipe that works well with what I had so I ended up trying to guess ingredients and amounts to use.

I started off by baking the ube for an hour or so and then after cooling, turning it into a paste. After mkaing the basic cheesecake filling I added the ube into it and mixed it all together – it was so cool to see all the colour changes, especially after adding lemon juice it became so bright

• Was happy that most of the cheesecake kept its shape once cut into but the centre was still quite soft and so it came of on some of the slices I took out 😭 think a little more flour would be needed to fix that.
• I covered the top with clingfilm while it set overnight and I didn’t realise it until after but the condensation meant water was dripping onto the cheesecake and that’s why the middle is a bit faded 💦

Taste was GREAT – Good enough that I shared it out with some friends and they gave some really positive feedback too!
